Hello, how can I turn off "recalculate on new candle only" in an indicator like in the platform?

Once you run a test and the historical tester window opened you can right-click on the indicator and tick the box "Recalculate on new candles only"

I meant how can I have this switch within my strategy so the indicators work different

I am interested in not having to wait until a candle finishes for my moving average to move

Such setting is only available at the level of the charts (either Historical tester or live Jforex charts) they are not available in the API or in the indicator's parameters when computed in your strategy. If you don't want to wait till the candle's expires to have your indicator's output then the solution is to make it working on lower trading period or even on tick method
