Tyrian purple dye

Eighty thousand snails must be killed to make 1ml of Tyrian purple dye. Due to the cost of such an operation, purple was traditionally the colour of kings and emperors. In Roman times, a child of such noble birth was said to be porphyrogenitos - born in the purple.

The colour comes from the snail mucus, which meant not only were the nobles of ancient times dressed in snail snot, but they also stank. The smell of Tyrian purple never quite goes away. The city of Tyre, a great centre of production from which the colour takes its name, was an unbearably stinky place and the Roman nobility needed no fanfares to announce their arrival. you could smell them coming.

The cochineal, an insect native to South and Central America, is a little more productive than the Tyrian sea snail. Eighty thousand of them - whether boiled, baked or steamed - will yield nearly 500g of the red dye that is still used as food colouring. Traditionally it put both the red in the ''Redcoats'' of the British army and the pink in the ''Pink'' coats of stylish British foxhunters.
